I've owned a diamond/sand knife sharpener for five years and sharpened knives until the rod became slick and useless. When THIS arrived my knives definitely needed sharpened. After sharpening one carving knife and three little dicing knives, THE ROD WAS SLICK AND USELESS. All the "diamond/sand" was scattered in the sink and the knife sharpener joined the five year old knife sharpener.in the garbage.

Wow I was impressed. This steel is very easy to use and forgiving. I would not recommend the shorter version and actually wish it were longer. I use it on kitchen and tool knives. It is pretty coarse compared other steels and takes off a fair amount of metal. I actually prefer it this way. The rough edge it makes is still very sharp and produces a kind of serrated effect when slicing at foods. I do wonder about it's durability and how many uses will come from it's grinding surface. Still I find it far better and easier to use than a stone from the same price range.

I have tried many sharpeners.... powered (don't bother, they grind the knife away more than they sharpen), cheap hand helds with ceramic or steel rods (works to a point but not sharp), and finally oil or wet stones (gets a hair shaving edge but takes FOREVER).This sharpener is almost as good as a stone in performance but way faster. In a minute a reasonably serviceable knife can be nearly hair shaving sharp. In 3 minutes a neglected knife can be nearly hair shaving sharp. Not wicked sharp, but every bit a great edge for typical kitchen use.For best results, I have found passing the knife over the sharpener face going with the edge works best, with maybe a stroke or two lightly against the edge as the last pass.

In the great scheme of things, this diamond steel is a Very Good Deal, but... at 800 grit, it's much too coarse for making a razor-sharp edge.Diamond stones cut incredibly fast, which is great for reestablishing an edge on very dull stainless knives. (Diamond stones are overkill for soft (carbon-steel) blades.) However, 800-grit stones leave a lot of roughness, or "tooth," and cutting feels like sawing. A sharpener that works quickly will often remove more metal than necessary, reducing the life of your blades. To give a sense of what a sharp edge requires, I have an 8000-grit water stone for polishing.

Sharpened a lot of knives in my life and this is the best sharpener I have used. It's easy, clean, stores with my kitchen tools so it's handy if I need it, and it's fast. It allows me to sharpen the entire blade with one motion on each side and it doesn't remove too much of the blade like motorized sharpeners do. Leaves a smooth, sharp edge that enables my knives to glide through what I'm cutting rather than dragging. If it ever gets lost, I'm buying another one.

I've been using a smaller version of this for about 5 years. We cook A LOT so the knife sharpener is part of our everyday life. We used it daily for 5 years and it JUST started to wear down. So, I bought this larger version and I love it. It is easy to use and works very quickly.

Great buy. Now I can sharpen my kitchen knives without having to pull over the old whet stone. Not sure if the edge stays sharper very long with this is so easy for a quick touch up. Recommend the end be place on a non-skid surface otherwise is slips and one might injury themselves. Just about 5-6 swipes on each side at less than a 33 degree angle and my knives stay sharp. Of course this is after one establishes the blade edge with a whet stone. I don't think this is designed to establish an edge but to keep an edge sharp. Plan to try on some kitchen scissors also.
